Kalderetang Kambing
- 7 lb. goat meat (ribs), cut up
- 1/3 lb. ginger (1/4-inch), sliced and minced
- 1 (15 oz.) can tomato sauce
- 2 c. pineapple juice
- 4 oz. liver sausage
- 1/4 c. dark soy sauce
- juice of half lemon
- 3 pieces bay leaves
- 3 pieces potato, peeled and cut in wedges
- 1 c. green peas
- 1 c. garbanzo beans
- 1 piece onion, sliced
- 2 cloves garlic, crushed
- 1 piece red bell pepper, cut in strips
- 2 Tbsp. chili paste (Sambal-Bajak)
- 1 tsp. fresh ground pepper
- 1/2 c. olive oil
- 1 tsp. salt
- In a large pot, put goat meat, ginger and enough water; boil it until tender.
- Discard liquid and ginger and put goat meat aside.
