Corned Beef With Parsley Sauce

  1. Place beef in a saucepan with sugar, vinegar, cloves and bay leaves. Add water to cover. Bring to a boil, reduce heat, cover and simmer for around 1 hour 15 mins, until a skewer inserted in corned beef is easily removed. Remove from heat and let cool in liquid.
  2. Meanwhile, to make the parsley sauce, melt butter over medium heat. Cook onion for 2 mins, until soft. Add flour and cook for 2 mins, stirring. Stir in milk. Bring to a boil, stirring, until thickened. Season. Add parsley.
  3. Slice beef and serve with parsley sauce, steamed vegetables and mustard.
