Corned Beef With Parsley Sauce
- 2 1/4 lb corned beef
- 1 tbsp brown sugar
- 1 tbsp vinegar
- 5 None whole cloves
- 2 None bay leaves
- None None Parsley Sauce
- 3 1/2 tbsp butter
- 1/2 None small onion, finely chopped
- 2 tbsp flour
- 2 cups milk
- 2 tbsp fresh parsley, chopped
- None None steamed vegetables, to serve
- None None mustard, to serve
- Place beef in a saucepan with sugar, vinegar, cloves and bay leaves. Add water to cover. Bring to a boil, reduce heat, cover and simmer for around 1 hour 15 mins, until a skewer inserted in corned beef is easily removed. Remove from heat and let cool in liquid.
- Meanwhile, to make the parsley sauce, melt butter over medium heat. Cook onion for 2 mins, until soft. Add flour and cook for 2 mins, stirring. Stir in milk. Bring to a boil, stirring, until thickened. Season. Add parsley.
- Slice beef and serve with parsley sauce, steamed vegetables and mustard.
