Rustic Salmon And Olive Tart

  1. Preheat oven to 400u0b0F. Line a baking tray with parchment paper.
  2. Join puff pastry sheets together to make a rectangle, overlapping by 1/3 inch. Transfer to prepared tray and bake for 10 mins.
  3. Meanwhile, brush salmon with oil. Season. Heat a large frying pan over medium heat. Cook salmon for 2-3 mins per side, until just cooked through.
  4. Brush pastry with egg. Bake for another 5 mins, until crisp and golden. Sprinkle with cheese and dill. Flake salmon over top. Add olives. Bake for 10-15 mins, until crisp and golden. Serve with mixed greens.
