Rustic Salmon And Olive Tart
- 2 sheets frozen puff pasty, thawed
- 8.75 oz skinless salmon fillet, de-boned
- 2 tsp olive oil
- 1 None egg, beaten
- 2 oz mozzarella cheese, grated
- 2 tbsp small fresh dill sprigs
- 2.5 oz stuffed green olives, halved
- None None mixed greens, to serve
- Preheat oven to 400u0b0F. Line a baking tray with parchment paper.
- Join puff pastry sheets together to make a rectangle, overlapping by 1/3 inch. Transfer to prepared tray and bake for 10 mins.
- Meanwhile, brush salmon with oil. Season. Heat a large frying pan over medium heat. Cook salmon for 2-3 mins per side, until just cooked through.
- Brush pastry with egg. Bake for another 5 mins, until crisp and golden. Sprinkle with cheese and dill. Flake salmon over top. Add olives. Bake for 10-15 mins, until crisp and golden. Serve with mixed greens.
