Melt-In-The-Mouth Vanilla Cookies
- 12 tbsp (1 1/2 sticks) unsalted butter, softened
- 1 cup powdered sugar, sifted
- 1 tsp vanilla bean paste or 3 tsp vanilla extract
- 1 1/2 tbsp milk
- 1 3/4 cups flour
- 2 tbsp cornstarch
- Beat butter, 1/3 cup of the powdered sugar and vanilla in a large bowl with an electric mixer until light and fluffy. Add milk, beat until combined. Sift in flours; beat on low speed until combined. Refrigerate for 10 mins, or until firm enough to roll.
- Roll the dough in parchment paper into a 12-inch long log, about 1 1/2 inches in diameter. Refrigerate for 1 hour.
- Preheat the oven to 325u0b0F. Line 2 baking pans with parchment paper. Cut the dough into 1/8 inch-thick slices. Place on prepared pans about 2 inches apart.
- Bake for 10 mins, or until just golden. Cool in pan 3 mins. Remove from pan; place on wire racks. While still warm, dust generously with the remaining 2/3 cup powdered sugar. Cool completely.
