Sourdough Loaf With Spinach Dip
- 2 tbsp olive oil
- 1 None onion, finely chopped
- 9 oz bacon, chopped
- 2 bunch fresh spinach or 1 package frozen spinach, thawed
- 1 clove garlic, minced
- 1 None lemon, zested and juiced
- 9 oz cream cheese, softened
- 1/2 cup creme fraiche
- 7 oz Cheddar cheese, grated
- 2 oz Parmesan cheese, grated
- 1 bunch fresh chives, chopped
- 1 None sourdough boule, top cut off, insides removed and reserved to serve
- None None crudites, to serve
- Preheat oven to 350u0b0F.
- Heat olive oil in a large frying pan over medium heat. Cook onion until translucent. Add bacon and cook until slightly browned. Add spinach and garlic and cook until spinach wilts.
- Add cream cheese and creme fraiche and mix until combined. Reduce heat and add Cheddar and Parmesan, a handful at a time, stirring until melted between additions. Add chives and season to taste.
- Place spinach mixture in hollowed out sourdough loaf. Place lid back on top, wrap tightly in foil and bake for 10 mins.
- Serve loaf with reserved dough pieces and crudites on the side.
