Grilled Vegetables And Couscous

  1. Bring 2 cups water to a boil in medium saucepan on high heat. Remove from heat and add couscous. Cover and let stand for 5 mins. Fluff the grains with a fork. Stir in the cilantro and lemon peel and juice.
  2. Meanwhile, heat a grill pan on high heat or preheat the grill to medium-high. Spray the vegetables with no stick cooking spray. Cook in batches for 2-4 mins each side, until tender.
  3. Combine the yogurt, mint and garlic in a small bowl and season to taste. Serve the couscous with the vegetables and mint yogurt on the side.
