Hearty Minestrone
- 2 tbsp olive oil
- 2 links beef sausages
- 1 None onion, finely chopped
- 2 None garlic cloves, crushed
- 1 stalk celery, chopped
- 1 None carrot, chopped
- 1 None zucchini, chopped
- 4 cups vegetable or chicken stock
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) cannellini beans, drained and rinsed
- 8 cups finely shredded cabbage
- 1/4 cup small shell pasta or other small soup pasta
- 2 tbsp chopped parsley
- None None Crusty bread, to serve
- Heat 1 tbsp of the oil in a large saucepan on high heat. Brown sausages for 2-3 mins, turning. Cool slightly. Slice and set aside.
- Heat remaining 1 tbsp oil in pan on high heat. Add onion and garlic and saute for 2-3 mins until tender. Add celery, carrot and zucchini and saute for 4-5 mins until tender.
- Return sausages to pan. Add stock, tomatoes and 2 cups water. Bring to a boil. Reduce heat to low and simmer for 30 mins. Stir in beans, cabbage and pasta. Simmer for 8-10 mins or until pasta is tender. Stir in parsley. Serve with crusty bread.
