Fennel And Garlic Roasted Pork Ribs
- 1/3 cup tomato paste
- 1/4 cup olive oil
- 1/4 cup sherry vinegar
- 1 tbsp fennel seeds
- 1 tbsp brown sugar
- 4 cloves garlic, crushed
- 2 tsp smoked paprika
- 2 racks pork spare ribs (1 lb each)
- None None Lemon wedges, to serve
- Combine tomato paste, oil, vinegar, seeds, sugar, garlic and paprika in shallow dish. Reserve 1/4 cup of the marinade. Add pork to remaining marinade; turn to coat. Cover; refrigerate 1 hour.
- Preheat the oven to 250u0b0F. Place pork on oiled wire rack in large roasting pan. Cover with foil. Roast for 2 hours.
- Increase oven temperature to 350u0b0F. Brush pork with reserved marinade. Roast, uncovered, for 45 mins, or until tender.
- Slice ribs between the bones. Serve with lemon wedges.
