Whole Wheat Banana Biscuits
- 1 c. plus 2 Tbsp. flour, divided
- 1 c. whole wheat flour
- 2 tsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- 3 Tbsp. softened margarine
- 1/2 c. mashed ripe banana
- 1/4 c. low-fat vanilla yogurt
- 2 Tbsp. skim milk
- vegetable cooking spray
- Combine 1 cup flour and the next 6 ingredients.
- Cut in margarine until mixture resembles coarse meal.
- Stir in banana and yogurt.
- Add milk; stir until dry ingredients are moistened.
- Turn dough out onto a lightly floured surface; let rest 5 minutes. Knead dough 4 times.
- Add enough of remaining flour to prevent dough from sticking to hands.
- Roll dough to 1/2-inch thickness. Cut with a 2-inch biscuit cutter.
- Place on a baking sheet coated with cooking spray.
- Bake at 450u0b0 for 8 minutes, or until golden brown.
- Makes 16 biscuits.
