Potato Skins

  1. Preheat oven to 400u0b0F. Line a baking dish with foil.
  2. Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin. Coat in oil and season. Place, skin-side up, on a wire rack in the baking dish. Bake for 20-25 mins, until browned and crisp. Turn over and sprinkle with cheese.
  3. Increase oven to 425u0b0F. Bake potato skins for another 4-5 mins, until cheese melts.
  4. Meanwhile, to make the salsa, combine all salsa ingredients. Set aside.
  5. Combine sour cream and chili sauce in a bowl. Set aside.
  6. Serve potato skins with salsa and sour cream mixture.
