Honey Panna Cotta With Apricots In Thyme Syrup
- 1 tbsp unflavored gelatin
- 2 1/3 cups buttermilk
- 1/2 cup light cream
- 1 cup honey
- 2 tsp fresh lemon thyme leaves
- 12 small apricots, halved and seeded
- 1 tbsp lemon juice
- Sprinkle gelatin over 1/4 cup of water in a small heatproof bowl. Stand bowl in small saucepan of simmering water; stir until gelatin dissolves.
- Meanwhile, bring buttermilk and cream to a boil in medium saucepan. Remove from heat. Whisk in 1/2 of the honey and gelatin mixture; strain into large bowl. Cool.
- Divide buttermilk mixture among eight 2/3-cup glasses. Refrigerate about 6 hours or overnight until set.
- For the apricots in thyme syrup, bring 2 cups water, remaining honey and the thyme to a boil in medium saucepan. Add apricots. Reduce heat to low; simmer, uncovered, for about 5 mins or until almost tender. Remove from heat. Add lemon juice. Cool slightly then refrigerate until cold.
- Serve panna cotta topped with apricots and syrup.
