Honey Panna Cotta With Apricots In Thyme Syrup

  1. Sprinkle gelatin over 1/4 cup of water in a small heatproof bowl. Stand bowl in small saucepan of simmering water; stir until gelatin dissolves.
  2. Meanwhile, bring buttermilk and cream to a boil in medium saucepan. Remove from heat. Whisk in 1/2 of the honey and gelatin mixture; strain into large bowl. Cool.
  3. Divide buttermilk mixture among eight 2/3-cup glasses. Refrigerate about 6 hours or overnight until set.
  4. For the apricots in thyme syrup, bring 2 cups water, remaining honey and the thyme to a boil in medium saucepan. Add apricots. Reduce heat to low; simmer, uncovered, for about 5 mins or until almost tender. Remove from heat. Add lemon juice. Cool slightly then refrigerate until cold.
  5. Serve panna cotta topped with apricots and syrup.
