No Bake Orange Macadamia Cheesecake

- 5 1/4 oz Graham crackers, broken
- 1 cup macadamias, lightly crushed
- 1/2 cup butter, melted
- 1/4 tsp ground cinnamon
- 1 cup orange juice
- None None For the Cheesecake
- 1 cup sugar
- 4 large eggs, separated
- None None Finely grated zest of two oranges
- 1/2 tbsp powdered gelatin
- 1/3 cup just-boiled water
- 1 lb cream cheese, at room temperature
- 1 1/4 cups heavy cream, whipped
- None None orange segments, to serve
- Lightly grease a 11-inch springform pan.
- Place crackers and half the nuts in a food processor and process until finely crushed. Add butter and cinnamon. Process until combined.
- Press mixture firmly into base of prepared pan. Chill for 15 minutes, until firm.
- Make Filling: combine juice, sugar, egg yolks and zest in a heatproof bowl. Whisk over a saucepan of simmering water for 4-5 minutes until thick and frothy. Remove from heat.
- Meanwhile, in a small bowl, whisk gelatin briskly into water with a fork until dissolved. Cool slightly.
- In a small bowl, using an electric mixer, beat cream cheese until smooth. Gradually blend in egg and gelatin mixtures. Transfer mixture to a large bowl. Fold cream through.
- Whisk egg whites in medium bowl until soft peaks form. Fold into cheese mixture.
- Pour into prepared pan. Top with remaining macadamias. Chill for 3 hours or overnight. Serve topped with orange segments.
