Egg And Bacon Rolls With Tomato Relish
- 1 tbsp oil
- 1 None onion, chopped
- 1 clove garlic, crushed
- 1 can (14 oz) diced tomatoes
- 1/2 cup packed brown sugar
- 1/2 cup malt vinegar or cider vinegar
- 6 slices bacon
- 6 None eggs
- 12 None lettuce leaves
- 6 None rolls, split
- For the tomato relish, heat oil in a medium saucepan on medium heat. Add onion and garlic and cook for 4 mins, stirring, until onion is tender. Stir in tomatoes, sugar and vinegar. Bring to a boil, stirring. Reduce heat to low and simmer for 30 mins, until thickened. Season to taste and transfer to a bowl to cool.
- Cook bacon in a nonstick skillet on medium heat for 3-4 mins, until beginning to crisp. Remove from pan. Spray 6 egg rings with no stick cooking spray. Place in skillet and crack an egg into each. Cook for 2 mins, turn and cook for another minute, until whites are firm but yolks still runny.
- Place lettuce, bacon and an egg in roll. Top with a dollop of tomato relish. Serve immediately.
