Honey Sesame Shrimp
- 1 tbsp vegetable or peanut oil
- 2 cloves garlic, finely chopped
- 1 2/3 lbs large shrimp, peeled and deveined
- 1 large carrot, cut into matchsticks
- 1 medium green pepper, cut into matchsticks
- 1 can (15 oz) baby corn, drained and halved lengthwise
- 3 None green onions, cut into 1-inch lengths
- 1/3 cup honey
- 1 tbsp light soy sauce
- 1/2 tsp cornstarch mixed with 1 tbsp cold water
- 1 tbsp sesame seeds, toasted
- Heat a wok or large skillet on high heat. Add oil; swirl to coat. Add garlic and shrimp; stir-fry for 1 min or until shrimp curl and change color. Add carrot, pepper and corn; stir-fry for 1 min more.
- Add onion, honey, soy sauce and cornstarch mixture; stir-fry for 1-2 mins or until honey coats shrimp.
- Serve shrimp sprinkled with sesame seeds.
