Steak With Roasted Tomatoes
- 5 tbsp olive oil
- 2 1/4 lb tomatoes, cored and halved
- 1 inch fresh ginger, peeled and finely diced
- 2 cloves garlic, peeled and finely diced
- 3 sprigs fresh thyme, finely chopped
- 2 sprigs fresh sage, a few leaves reserved for garnish, remainder finely chopped
- 5 None spring onions, sliced
- 1/2 lb yellow cherry tomatoes, halved
- 4 - 7 oz sirloin steaks
- 8 slices ciabatta
- Preheat oven to 425u0b0F. Coat a roasting pan with 1 tbsp oil and place tomatoes cut-side down. Roast for 5-10 mins, until skin is wrinkled. Allow to cool then remove skin. Reduce oven temperature to 300u0b0F. Place roasted tomatoes in an ovenproof serving dish and lightly crush with a fork. Add ginger, garlic, thyme and sage. Roast for 15 mins. Add spring onions and yellow cherry tomatoes and roast for 10 mins.
- Meanwhile, heat 2 tbsp oil over high heat, season steaks then sear for 3 mins per side. Wrap in foil and allow to rest for 5 mins.
- To finish, remove tomatoes from oven and keep warm. Increase oven temperature to 325u0b0F. Lay ciabatta over a baking sheet and drizzle with 2 tbsp oil. Bake for 10 mins, until crispy. Arrange on plates with steaks and tomatoes. Season and garnish with sage.
