Lamb Flatbreads
- 1 tbsp oil
- 1 lb ground lamb
- 2 tsp sesame seeds
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp red pepper flakes
- 1/2 tsp honey
- 6 None small flatbreads or pita, lightly toasted
- 1 cup hummus
- None None FOR THE SALAD
- 2 oz arugula
- 1/2 cup fresh mint leaves, chopped
- 1 None tomato, chopped
- 1 tbsp olive oil
- Heat oil in a large skillet on high heat. Brown ground lamb for 4-5 mins, breaking up lumps. Stir in seeds and spices and cook for 1-2 mins, until seeds are toasted. Add honey and cook for 30 seconds. Remove from heat and season to taste.
- For the salad, combine all ingredients in a bowl. Season to taste.
- Spread flatbreads with hummus. Cover evenly with lamb mixture, then top with a handful of salad to serve.
