Mini Bacon Meatloaves
- 11 oz lean ground beef
- 1/2 small onion, finely grated
- 1 small zucchini, finely grated
- 2 tsp soy sauce
- None None Few drops Tabasco sauce
- 1 None egg, lightly beaten
- 2 tbsp packaged dried breadcrumbs
- 2 slices bacon
- 2 medium medium tomatoes, halved
- 1 tbsp vegetable or olive oil
- None None Mashed sweet potato and cooked peas, to serve
- Preheat the oven 400u0b0F. Line a baking pan with foil.
- Place ground beef, onion, zucchini, sauces, egg and breadcrumbs in a large bowl. Using clean hands, mix until well combined. Shape into 2 oval meatloaves. Place on prepared pan.
- Wrap each loaf with bacon; secure with toothpicks. Place tomato on pan with meatloaves. Drizzle with oil and sprinkle with freshly ground black pepper.
- Bake for 20-25 mins or until meatloaves are cooked through. Remove toothpicks. Serve with roasted tomato, mashed sweet potato and peas.
