Potatoes In Garlic Sauce
- 1 2/3 lbs small potatoes
- 1 slice bread
- 6 tbsp olive oil
- 1 None onion, finely diced
- 4-5 cloves garlic, crushed
- 1/3 cup blanched almonds
- 1/3 cup chopped fresh parsley
- 1-2 tsp cayenne pepper
- Cook the potatoes in boiling, salted water for 15-20 mins until tender. Meanwhile, toast the bread then place in a bowl of cold water.
- Heat 1 tbsp of the oil in a medium skillet on medium-high heat. Saute the onion and garlic for 4-6 mins. Remove the bread from the water and break into pieces. Add the bread, almonds, parsley and cayenne pepper to the skillet and continue to cook for 2-3 mins.
- Transfer the mixture to a food processor. Add remaining 5 tbsp oil and season. Process until sauce is smooth. Add water if the mixture is too thick. Transfer the sauce to a serving plate and top with potatoes. Serve.
