Pork And Beans In Tomato Sauce
- 3-4 tbsp olive oil
- 4-6 None pork steaks or chops
- 400 g potatoes, peeled and cubed
- 1 None onion, peeled and diced
- 1 each red, yellow and green pepper, deseeded and diced
- 850 g canned tomatoes
- 100-200 ml tomato juice
- 420 g can each white beans and red kidney beans, drained and rinsed in cold water, drained
- 60 g Gouda cheese, grated
- 100 ml sour cream or creme fraiche
- None None parsley, to garnish
- Heat the oil in a large, deep ovenproof frying pan. Add the pork and sear on both sides for a few mins. Season with salt, pepper. Transfer to a baking dish and set aside.
- Add the potatoes to the pan and fry a few mins until golden. Add the onion and peppers and saute briefly. Stir in the canned tomatoes, breaking them up with a spoon. Add the tomato juice and beans. Bring to a boil, season well and simmer 15 mins.
- Preheat the oven to 400u0b0F. Add the beans and sauce to the baking dish with the meat. Mix the cheese and sour cream and spoon in dollops on top. Cook for about 25 mins until the meat is tender, then sprinkle with parsley to serve.
