Red Curry Pilau With Sausages

  1. Heat olive oil in a large saucepan on high. Saute onion, celery, pepper, red curry paste, chili and garlic for 2-3 minutes, until vegetables are tender and mixture is aromatic.
  2. Mix in basmati rice, chicken stock, cherry tomatoes and white wine. Bring to a boil. Reduce heat to low and simmer, covered for 15-20 minutes, until all liquid is absorbed.
  3. Stir in sausage and season to taste. Cook, stirring, for 1-2 minutes.
  4. Serve sprinkled with parsley.
