Fruity Cake Squares
- 1/3 cup firmly packed brown sugar
- 3 tbsp butter
- 1 tbsp dark corn syrup
- 2 pkg (7 oz each) mixed dried fruit
- 1 tsp mixed spice, such as pumpkin pie spice
- 1/2 tsp freshly grated nutmeg
- 1 pkg (16 oz) yellow cake mix
- 1 cup sliced almonds
- 1/2 cup powdered sugar, sifted
- None None Red food color (optional)
- Preheat the oven to 350u0b0F. Lightly grease a 13 x 9-inch baking pan and line with parchment paper.
- Combine brown sugar, butter and syrup in a medium saucepan on medium heat. Stir until sugar has dissolved. Add dried fruit and spices. Bring to a boil. Remove from heat and cool for 10 mins.
- Prepare cake mix according to package directions. Spread evenly in prepared pan. Sprinkle with fruit mixture and then almonds. Bake for 25-30 mins, until toothpick inserted into center comes out clean. Cool completely in pan on wire rack.
- For the icing, combine powdered sugar and 2 tsp hot water in a small bowl. If desired, add a few drops red food color to tint icing pink. Drizzle over cooled cake. Cut into squares to serve. Store in an airtight container.
