Baked Mushrooms
- 1/3 c. olive oil
- 2 Tbsp. wine vinegar
- 1 medium onion, grated
- 1/2 to 1 clove garlic, minced
- 2 Tbsp. chopped fresh parsley
- 1/8 tsp. dried basil
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 lb. fresh mushrooms, sliced
- 4 Tbsp. butter or as needed
- 1/2 c. coarse, homemade bread crumbs
- 1 Tbsp. freshly grated Parmesan cheese
- Combine oil, vinegar, onion, garlic, herbs, salt and pepper. Add mushrooms and, basting frequently, marinate for 3 hours.
- Drain and saute in butter over high heat for 1 minute.
- Reduce heat to low; cook for 10 minutes, stirring frequently.
- Transfer to a buttered baking dish; sprinkle bread crumbs and cheese over mushrooms.
- Broil until top is browned.
- Serve as a first course or vegetable accompaniment to meat or fowl.
- Serves 4 to 6.
