Moroccan Beef And Couscous
- 1 1/4 cups couscous
- 1 lb ground beef
- 1 None onion, chopped
- 2 tbsp tomato paste
- 2 tbsp Moroccan spice mix
- 14 oz cauliflower, cut into florets, stems chopped
- 2 medium zucchini, sliced
- 3 cups thinly sliced Swiss chard, white stems removed
- None None Greek yogurt and lemon wedges, to serve
- Bring 2 cups water to boil in a medium saucepan. Add the couscous. Cover and let stand for 5 mins or until liquid is absorbed. Fluff with a fork. Set aside.
- Heat a large deep skillet on high heat. Add the ground beef and cook, stirring to break up lumps, for 5 mins or until browned. Add the onion, tomato paste and spice mix; cook and stir for 3 mins.
- Stir in the cauliflower, zucchini and 1 cup water. Bring to a boil. Reduce heat to medium; cover and simmer for 6 mins or until sauce reduces and vegetables are tender. Stir in chard until wilted. Divide couscous among serving bowls. Top with the meat mixture. Serve with yogurt and lemon wedges.
