Sweet Potato And Ricotta Terrine With Spicy Tomato Sauce
- 1 lb sweet potato, peeled, cubed
- 1 tbsp olive oil
- 1 lb ricotta cheese
- 2 None eggs, separated
- 2 None green onions, thinly sliced
- 1 tbsp fresh thyme leaves
- 1 None lemon, zested and juiced
- None None Spicy Tomato Sauce
- 1 tbsp olive oil
- 1 None small onion, finely chopped
- 1 clove garlic, minced
- 1 (13.5 oz) can diced tomatoes
- 1 tbsp brown sugar
- 1 tbsp grainy mustard
- 1 tsp garam masala
- None None salad and crusty bread, to serve
- Preheat oven to 350u0b0F. Lightly grease and line an 8x4 inch loaf pan with parchment paper.
- Toss sweet potato and oil in a baking pan. Season. Roast for 25-30 mins, shaking occasionally, until golden brown. Let cool.
- Combine ricotta, egg yolks, green onions, thyme, lemon zest and lemon juice. Season. Add sweet potato and toss to combine. Whip egg whites to soft peaks then fold in. Transfer to prepared pan and bake for 45-50 mins, until firm to the touch.
- Meanwhile, to make the spicy tomato sauce, heat oil in a frying pan over medium heat. Saute onion and garlic for 1 min, until tender. Add tomatoes, sugar, mustard and garam masala. Reduce heat and simmer for 5 mins, until thick.
- Serve terrine, sliced, with spicy tomato sauce, salad and crusty bread.
