Hawaii Toast
- 2 tbsp oil
- 4 None pork cutlets (about 120g each)
- 200 g carrots, halved lengthways and thinly sliced
- 300 g apricots, pitted and diced
- 75 g almonds, coarsely chopped
- 2-3 tbsp apricot jam
- 4 thick slices white bread
- 150 g gouda, grated
- 5 stems parsley, chopped
- Heat oven to 425u0b0F. Heat oil in a pan and brown the pork for about 2 mins on each side until cooked through. Season with salt and pepper then set aside.
- For the apricot sauce, add the carrots to the pan and saute for 3 mins. Stir in the apricots and almonds and saute 3 more mins. Season with salt and pepper, stir in the jam to heat through, then remove from the heat.
- To assemble, place the bread slices on a lined baking sheet. Top with the pork and apricot sauce. Sprinkle with cheese and bake for about 10 mins until the cheese is golden. Serve with a sprinkling of chopped parsley.
