Meatball Sub
- 1 lb ground beef
- 4 cloves garlic, minced
- 3 tbsp dried breadcrumbs
- 1/3 cup Parmesan cheese, freshly grated
- 2 tbsp Worcestershire sauce
- 1 None egg, lightly whisked
- 1 tbsp vegetable or olive oil
- 1/3 cup tomato puree
- 1 None Turkish pide bread
- 2 oz baby spinach
- 1/3 cup cheese, grated
- None None mixed greens, to serve
- Preheat broiler. Combine ground meat, 3 cloves garlic, breadcrumbs, Parmesan, Worcestershire and egg. Using damp hands, shape mixture into 24 meatballs. Heat 1/2 tbsp oil in a frying pan over medium heat, cook meatballs, in batches, for 3 mins, or until browned. Set aside.
- Reduce heat, add remaining oil and cook remaining garlic, stirring, for 30 seconds, or until fragrant. Add tomato puree and simmer, stirring occasionally, for 5 mins, or until sauce thickens slightly. Return meatballs to pan and coat in sauce. Cover and simmer for 5 mins, or until meatballs are cooked.
- Using a serrated knife, cut a 1/3 inch slice horizontally off top of bread. Place both pieces of bread, cut-side up, on a large baking tray. Top bread base with spinach then meatball mixture. Sprinkle with cheese then broil for 2 mins, or until golden. Transfer to a chopping board. Add top piece of bread and sandwich together. Cut into 4 equal pieces. Serve with mixed greens.
