Salmon Patties

  1. Cook potatoes in a saucepan of boiling water for 15 mins, until tender. Drain and return to pan on low heat for 2 mins until dry. Remove potatoes from heat and mash lightly. Add butter and hot milk, beating until smooth. Set aside to cool completely.
  2. Flake salmon into a bowl. Add potato and Parmesan. Season, mix well and shape into eight patties. Place on a tray and chill for 1 hour.
  3. Dust patties with flour. Brush with egg and coat with breadcrumbs. Heat oil in a skillet on medium. Cook patties for 3-5 mins each side until golden. Serve with salad and lemon wedges.
