Pork Chops With Caramelized Apple And Cream Sauce
- 4 tbsp butter
- 2 None small green apples, cored, thinly sliced
- 1 tbsp light soft brown sugar
- 1/4 cup sherry
- 1 1/2 cups heavy cream
- 1/3 cup pecans, toasted, coarsely chopped
- 2 tbsp fresh sage leaves
- 1 tbsp olive oil
- 4 None medium boneless pork chops
- None None mashed potatoes, to serve
- None None salad, to serve
- For the sauce, melt the butter in a large frying pan. Add the apples and cook, stirring, for 5 mins until lightly browned. Add the sugar and cook for 4-5 mins over low heat until the apples caramelize. Stir in the sherry and bring to a boil. Reduce the heat and simmer for 2-3 mins until the liquid has almost evaporated. Stir in the cream and simmer for 1-2 more mins until slightly thickened. Stir in the pecans and sage leaves.
- Meanwhile, brush a griddle pan with the oil and preheat over high heat. Cook the cutlets for 3-4 mins on each side, until cooked through. Serve with sauce, mashed potatoes, and salad.
