Hummingbird Cake

  1. Preheat oven to 350u0b0F. Brush an 8-inch square cake pan with melted butter. Line base and sides with parchment.
  2. Combine flour, sugar, cinnamon, and baking powder in a bowl. Crack eggs into a bowl and whisk lightly. Add eggs to flour along with oil, walnuts, bananas and pineapple. Stir until combined.
  3. Pour into prepared pan and smooth surface. Bake for 1 hour, or until a skewer comes out clean. Invert onto a wire rack and allow to cool.
  4. With an electric mixer, beat cream cheese until pale. Gradually beat in confectioners' sugar until light and fluffy. Spread over cake.
