Duck And Lentil Salad

  1. Cook lentils according to package instructions. Drain.
  2. Heat 1 tbsp oil in saucepan, add chopped onion and carrots and cook, stirring, for 2-3 mins. Add lentils then allow to cool slightly. Add 1/2 sliced onion along with apples, vinegar, thyme, 3 tbsp olive oil and honey. Season. Add duck breast and walnuts. Divide between 4 plates and garnish with extra thyme and remaining sliced onion.
