Banana And Pecan Loaf
- 3/4 cup self-rising flour
- 1/2 tsp ground cinnamon
- 1/3 lb banana, mashed
- 1 cup extra light olive oil
- 3/4 cup buttermilk
- 1 cup brown sugar
- 1/2 cup pecans, chopped
- 2 None large eggs, lightly beaten
- None None honey, to serve
- None None butter, to serve
- Preheat oven to 350u0b0F. Grease and line a 6x10 inch loaf pan. For the batter, sift flour and cinnamon into a large bowl. Add all remaining ingredients except for the honey and butter, mixing until just combined. Pour into prepared pan and level the top. Bake for 45-50 mins. Remove from oven and cover with foil to prevent further browning. Bake for 45-50 more mins, until golden and a skewer comes out clean. Cool in pan for 5 mins then turn out onto a wire rack to cool completely. Serve with butter and honey.
