Mushroom Crust Quiche
- 5 Tbsp. butter
- 1/2 lb. mushrooms, chopped
- 1/2 c. chopped soda crackers
- 3/4 c. chopped green onion
- 2 c. shredded Jack cheese
- 1 c. cottage cheese
- 3 eggs, beaten to blend
- 1/4 tsp. paprika
- Preheat oven to 350u0b0.
- Lightly butter a 9-inch pie plate. Melt 3 tablespoons butter in skillet over medium heat.
- Add mushrooms and stir until tender, about 4 minutes.
- Remove from heat.
- Stir in cracker crumbs.
- Press into bottom and sides of plate.
- Melt 2 tablespoons of butter in skillet.
- Add onions and stir to soften, about three minutes.
- Sprinkle over crust.
- Top with Jack cheese.
- Blend cottage cheese, eggs and paprika in processor.
- Pour over cheese.
- Bake about 35 minutes until tester inserted in center comes out clean.
