Caramel Almond Bars

  1. Preheat oven to 350u0b0F. Lightly grease and line an 8x12 inch rimmed baking pan with parchment paper, extending paper 2 inches over long sides.
  2. In a stand mixer, beat butter and powdered sugar together until pale and creamy. Stir in egg yolks then flour. Mix until just combined. Transfer to prepared pan and press into base. Bake for 10-12 mins, until light golden brown.
  3. Reduce oven to 325u0b0F.
  4. In a medium saucepan, combine sugar, butter and honey. Stir over low heat until sugar dissolves. Simmer for 3-5 mins, until mixture is golden then stir in almonds. Spread almond mixture evenly over cookie base. Bake for 15-20 mins, until topping is golden brown. Let cool in pan for 5 mins. Cut into squares while still warm then let cool completely.
