Chocolate Spelt Waffles With Caramel Sauce
- 5.25 oz soft caramels, chopped
- 1 1/4 cups heavy cream
- 1/2 cup butter, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 3 None eggs
- 1 3/4 cups spelt flour
- 1 tsp baking powder
- 1/2 cup 2% milk
- 2/3 cup yogurt
- None None oil, for the waffle iron
- 5.25 oz dark chocolate, melted
- For the caramel sauce, bring caramels and cream to a boil, stirring. Stir until caramels melt then simmer for 15 mins, stirring occasionally. Remove from heat and let cool, stirring occasionally.
- Meanwhile, whisk together butter, sugar, vanilla extract and a pinch of salt until creamy. Beat in eggs and 1/4 cup flour. Mix baking powder and remaining flour together then stir into batter, along with milk and yogurt.
- Heat a heart-shaped waffle iron and brush with a little oil. Add 2 tbsp batter and cook for 2 mins, or until golden. Transfer to a wire rack. Repeat with remaining batter.
- Dip waffles in melted chocolate. Lay on parchment paper and allow to dry. Serve with caramel sauce.
