Margarita Cupcakes
- 1 (18.25 oz) box white cake mix, such as Duncan Hines
- 1 cup margarita mixer
- 1 tbsp tequila
- 1 None orange, zested and juiced
- 3 None egg whites
- 2 tbsp vegetable oil
- 1 (16 oz) tub white frosting
- 2 None limes, 1 juiced, 1 sliced
- None None sprinkles, to garnish
- Preheat oven to 350u0b0F. Line 2 - 12-cup muffin pans with paper liners.
- Mix together white cake mix, margarita mixer, tequila, 1 tsp orange zest, 1/3 cup orange juice, egg whites and vegetable oil until just combined. Distribute between paper liners and bake for 22 mins, or until a skewer inserted in the center comes out clean. Let cool completely.
- Beat together frosting and 2 tsp lime juice. Transfer to a piping bag fitted with a large tip then frost cupcakes. Garnish with lime wedges and sprinkles.
