Ravioli With Spicy Tomato Sauce, Olives And Feta
- 2 tbsp olive oil
- 4 slices bacon, chopped
- 2 cloves garlic, minced
- 1/2 tsp dried chili flakes
- 1/2 tsp ground paprika
- 1/2 cup red wine
- 13.25 oz fresh ravioli
- 2 1/2 cups tomato puree
- 2.5 oz black olives
- 3.5 oz feta cheese, crumbled
- 2 oz baby arugula
- In a large saucepan, heat oil over medium heat. Saute bacon, garlic, chili flakes and paprika for 2-3 mins, until bacon is golden. Add wine and cook for 1-2 mins, until slightly reduced. Add pasta and toss to coat. Add tomato puree and season. Reduce heat and simmer, covered, for 8-10 mins, until pasta is al dente and liquid has reduced and thickened.
- To serve, add olives and toss to combine. Sprinkle with feta and arugula.
