Cookies And Cream Cake
- 8 tbsp (1 stick) butter, at room temperature
- 1/2 cup packed brown sugar
- 3 None eggs, at room temperature
- 2 1/2 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 cup sour cream
- 4 oz chocolate creme sandwich cookies, such as Oreos, coarsely chopped
- 3 oz white baking chocolate, coarsely chopped
- 1 cup milk chocolate frosting
- None None White and milk chocolate curls, to garnish
- Preheat the oven to 350u0b0F. Grease a foil-lined 10 inch square baking pan.
- Beat butter, sugar, eggs, flour, cocoa powder, baking soda, sour cream and 3/4 cup water in a large bowl with an electric mixer on low speed until combined. Increase speed to medium. Beat for 2 mins or until mixture is smooth and just combined. Stir in cookies and white chocolate. Spoon into prepared pan.
- Bake for 45-50 mins or until a toothpick inserted into the center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
- Spread cooled cake with frosting. Garnish with chocolate curls.
