Cherry Brownie Bites
- 6.5 oz dark chocolate, chopped
- 3/4 cup butter, chopped
- 1/2 cup sugar
- 3 None large eggs, lightly beated
- 1/2 cup shredded coconut
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour, sifted
- 1/3 cup cocoa, sifted
- 3.5 oz glace cherries, finely chopped
- None None Powdered sugar, to dust
- Preheat oven to 325u0b0F. Lightly grease an 8 x 12 inch baking dish and line with parchment paper.
- Place chocolate and butter in a medium, heatproof bowl over a saucepan of simmering water and heat 2-3 minutes, stirring occasionally, until melted and smooth. Add sugar and set aside for 10 minutes.
- Whisk in eggs. coconut and vanilla, then fold in combined sifted flour and cocoa. Add cherries and mix well.
- Spoon mixture evenly into pan. Bake 30-35 minutes, until just firm. Set aside to cool completely in pan.
- Cut into bite-sized shapes using cookie cutters. Dust with powdered sugar to serve.
