Coconut Monster Cookies
- 1 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 c. butter
- 1/2 c. sugar
- 1/2 c. packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 c. quick rolled oats
- 1 c. finely chopped apple
- 2 c. ground coconut
- Sift flour, baking powder, soda and salt. Set aside.
- In a large bowl of mixer cream butter.
- Add sugars and beat until light and fluffy.
- Blend in egg and vanilla.
- Blend in dry ingredients, then oats, chopped apple and 1 1/3 cup of the coconut.
- Combine well.
- Then drop by 1/4 cup portions onto ungreased cookie sheets. Flatten slightly.
- Sprinkle with coconut.
- Bake at 375u0b0 for 15 minutes or until golden.
- Cool 2 minutes on sheet, then transfer to wire rack.
- Makes 14 to 15 cookies.
- You can also just press dough in greased 9 x 13-inch pan.
- Bake 25 to 30 minutes.
- Cool and cut into squares.
