Vanilla And Red Wine Poached Pears
- 2 cups dry red wine
- 2 (2 inch) pieces orange zest
- 1/2 cup orange juice
- 1 cup granulated sugar
- 1 None vanilla bean, split lengthwise, seeds scraped out
- 1 None cinnamon stick
- 6 None firm pears, peeled, stem intact
- In a large saucepan, combine wine, orange zest, orange juice, sugar, vanilla bean pod, vanilla bean seeds and cinnamon stick. Add 1 2/3 cups water.
- Arrange pears in pan. Cover surface with parchment paper then place a heatproof small plate over pears to keep submerged. Bring to a boil. Reduce heat and simmer, covered, over medium-low heat for 20 mins, or until pears are tender. Transfer pears to a large deep bowl. Cover.
- Meanwhile, simmer remaining syrup over medium heat for 10 mins, or until reduced. Serve warm or cooled pears drizzled with syrup.
