Blood Orange And Lemon Yogurt Cups

  1. Split the vanilla bean in half lengthwise and scrape the seeds into a small saucepan. Add the vanilla bean to the pan with the sugar, 1/2 cup water and lemon peel; bring to a boil. Reduce the heat to low; simmer for 6 mins or until the syrup has thickened slightly. Cool; discard the vanilla bean. Stir in the lemon juice.
  2. Combine the orange slices and sugar syrup in a medium bowl.
  3. Spoon the yogurt into four 1 1/4-cup serving glasses. Top with oranges, syrup and lemon peel. Serve topped with mint.
