Fish And Vegetable Stir-Fry
- 9 oz fresh rice noodles or noodles of choice
- 2 tsp vegetable oil
- 1 2/3 lbs firm white fish fillets, cut into 2-inch pieces
- 7 oz snow peas, trimmed and diagonally sliced
- 1 bunch baby bok choy, quartered
- 1 bunch broccolini, sliced
- 4 None green onions, sliced
- 1/4 cup lite soy sauce
- 2 tbsp sweet chili sauce
- None None Cilantro leaves, to serve
- Cook noodles according to package directions. Drain well.
- Heat oil in a wok or large skillet on high heat. Stir-fry fish in 2 batches, for 2-3 mins until cooked through. Transfer to a plate. Add snow peas, bok choy, broccolini and onions to the wok; stir-fry for 3-5 mins, until tender.
- Add noodles, fish, soy sauce and chili sauce to wok; stir-fry until heated through. Serve topped with cilantro.
