Deli-Style Italian Pasta Salad
- 1 7-oz package Rotelle pasta (large spirals) or ziti (cut tubes)
- 6 oz provolone cheese, cut into 3/4 -inch cubes
- 6 oz Genoa salami, cut into strips
- 1 small zucchini, thinly sliced
- 1 small onion, thinly sliced and separated into rings
- 1/2 c chopped green or red sweet pepper
- 1 2- 1/4- oz. can sliced pitted ripe olives, drained
- 1/4 c. grated Parmesan cheese
- 1/4 c. snipped fresh parsley
- 1/3 c. olive oil
- 1/4 c. white wine vinegar
- 1-1/2 Tsp dry mustard
- 1 Tsp. dried oregano, crushed
- 1 Tsp. dried basil, crushed
- 2 medium tomatoes, cut into wedges
- Parsley sprigs (optional)
- Cook pasta according to package directions; drain.
- Rinse with cold water and drain again.
