Christmas Cake Fruit Mix
- 6 cups golden raisins
- 2 1/2 cups currants
- 2 1/4 cups raisins, chopped
- 1 1/2 cups pitted dates, chopped
- 1 1/2 cups prunes, chopped
- 1 1/2 cups glace cherries, quartered
- 1/2 cup dried apricots, chopped
- 1/2 cup crystallised ginger, chopped
- 1/2 cup candied mixed citrus peel
- 3 medium apples, peeled, cored and grated
- 2/3 cup fig jam
- 2 tbsp grated orange peel
- 1/2 cup orange juice
- 1 tbsp grated lemon peel
- 1/4 cup lemon juice
- 2 1/4 cups firmly packed brown sugar
- 1 tbsp mixed spice, such as pumpkin pie spice
- 1 1/4 cups Grand Marnier, rum or brandy
- Combine all ingredients in large bowl; mix well. Cover tightly. Store in a cool, dark place at least overnight or for up to a month, stirring occasionally.
- Use this basic fruit mixture recipe to make one deep 9-inch round cake, one boiled pudding and about 48 fruit mince tarts.
