Baked Potato And Cauliflower Appetizer
- 1 lb potatoes
- 1 None large cauliflower, cut into florets
- 2 1/2 tbsp butter
- 1 None onion, diced
- 1/3 cup flour
- 1/2 cup milk
- 4 oz gouda cheese, grated
- 3-4 tsp Dijon mustard
- 1 pinch sugar
- 1 pinch grated nutmeg
- 1 oz tortilla chips
- Cook the potatoes in salted, boiling water 20-25 mins, until tender. Meanwhile, cook the cauliflower in a separate pan of boiling, salted water 6-8 mins until tender. Drain cauliflower and reserve the cooking liquid. Drain potatoes and run them under cold water until cool. Peel and slice in half, if large.
- For the sauce, melt the butter in a saucepan, add the onion and saute 4-5 mins over medium-low heat until soft. Sprinkle with the flour and saute 1-2 mins. Gradually stir in the milk and heat gently until thickened. Mix in the mustard, sugar, nutmeg and half the cheese.
- Arrange the cauliflower and potatoes in a greased baking dish. Pour in the sauce and sprinkle with the remaining cheese. Bake 25-30 mins. Arrange the tortilla chips on top and serve hot.
