Coffee Walnut Loaf
- 2/3 cup walnuts, toasted
- 8 tbsp (1 stick) butter, chopped
- 1 cup granulated sugar
- 1/2 cup milk
- 2 tbsp plus 2 tsp instant coffee granules
- 1 1/2 cups self-rising flour
- 2 tsp ground cinnamon
- 2 None eggs, lightly beaten
- 2 tsp butter
- 1 cup powdered sugar
- Preheat the oven to 325u0b0F. Grease an 8 x 5-inch loaf pan. Line bottom and long sides with parchment paper, extending paper at long sides for handles.
- Chop half of the nuts.
- Stir butter, sugar, milk and 2 tbsp coffee in small saucepan on low heat until smooth. Sift flour and cinnamon into large bowl. Stir in butter mixture, eggs and chopped walnuts. Pour mixture into prepared pan.
- Bake 15 mins. Sprinkle with remaining nuts. Bake further 30 mins until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
- For the coffee icing, combine 1 tbsp boiling water, remaining 2 tsp coffee and butter in small heatproof bowl. Stir in sifted powdered sugar to form a firm paste. Place bowl over small saucepan of simmering water; stir until icing is spreadable. Drizzle icing over loaf.
