Peach Loaves
- 2 1/3 cups self-rising flour
- 1 tbsp mixed spice, such as pumpkin pie spice
- 2/3 cup firmly packed brown sugar
- 1/3 cup slivered almonds
- 1/2 cup milk
- 2 None eggs, lightly beaten
- 3 tbsp butter, melted
- 1 can (15 oz) peach slices in natural juice, drained, halved lengthwise
- 2 tbsp granulated sugar
- Preheat the oven to 350u0b0F. Lightly grease two 8 x 4-inch loaf pans. Line the bottom and sides with parchment paper.
- Sift the flour and spice into a large bowl. Stir in the brown sugar and almonds. Fold in the combined milk, eggs and butter. Spoon the mixture evenly into the prepared pans.
- Arrange the peach slices evenly over the top of each cake. Sprinkle with sugar.
- Bake for 35-40 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
