Fish And Chips

  1. Combine 3/4 cup all-purpose flour and self-rising flour. Season. Gradually whisk in beer until smooth. Set aside for 15 mins.
  2. Meanwhile, heat oil in a wok or deep saucepan. Working in batches, deep-fry french fries for 5-10 mins, until golden. Drain on paper towels.
  3. Dust fish fillets in remaining flour, shaking off excess. Dip into batter then deep-fry, in batches, for 2-3 mins, until golden. Drain on paper towels.
  4. Just before serving, re-fry french fries for 3-5 mins, until crispy. Drain.
  5. Serve fish and chips with tartar sauce and lemon wedges.
