Fruity Chocolate Chip Bars

  1. Preheat oven to 350u0b0F. Grease and line an 8x12 inch rimmed baking tray with parchment paper, extending paper 2 inches over sides.
  2. In a medium saucepan, stir sugar and butter over low heat until smooth. Remove from heat and stir in flour then egg yolk. Press firmly into base of prepared pan and bake for 10 mins, or until lightly browned. Let cool.
  3. Meanwhile, to make the topping, whip eggs and sugar until thick and pale. Fold in flour then remaining ingredients. Spread over baked cookie base and bake for 25 mins, or until lightly browned. Let cool in pan then cut into 24 squares.
