Spiced Fried Vegetables
- 1 litre vegetable oil, for frying
- 200 g gram (chickpea) flour
- 1 tsp salt
- 1/2 tsp chilli powder
- 1 tsp ground cumin
- 1/2 tsp baking powder
- 2 None onions, cut into wedges
- 1/2 None head cauliflower, cut into florets
- 3 None potatoes, peeled and roughly chopped
- 2 None plantains, peeled and cut into thick slices
- None None Mango chutney, to serve
- None None Fresh herbs, to garnish
- Heat the oil in a saucepan until it shimmers. Mix the flour, salt, chili powder, cumin and baking powder together in a bowl. Stir in 1 1/8 cups cold water until a thick, smooth batter forms.
- Drag each piece of vegetable through the batter, then lower it into the hot oil. Fry for 4-6 mins, depending on the size of the vegetable. Remove using a slotted spoon. Serve with mango chutney and sprinkle with herbs.
